Jealousy

My eldest has changed completely after baby gal home on 8 Dec 2015 from hospital. He scream and shout at everyone in the house when he was irritated etc. Everythings dun want.. Shower/ eat or school. Cry and frustrated almost everydays.. With Daryl out of town worst! I have to manage him and my wound pain. Poor him too, have to accept a new sibling and new school as we have no choice need to place him in childcare since 1st Dec 2015. He is not use to long hours and come back late. New maid came on 10 Dec too. Lucky she is ex-sg maid before so still know how to play and coax kid at times. She is quite fast and teachable in houseworks too. Hope my eldest can accept baby gal soon.

1st attempt - Simple Tiramisu

Google for recipe and found one in youtube showing how to make tiramisu. So I try it out once I got all ingredients. Mascropone cheese is the only one I search a few ntuc & giant. Ended up I got it at NTUC finest. Maybe finest is for "atas" people that why have this cheese. haha.
 
Only thing is the whipped cream that I didn't got what the video showed foamy and in it peak. I got quite watery instead. But I just added into the mix & all still taste good after 24 hrs in fridge. Thanks god.

Christmas potluck lunch

This year one of our colleague suggested to have potluck for Christmas lunch. So each department came out with a dish. Be it you cook or buy. As long as it's food, no one care! We got gift exchange too. Budget per gift is below $15. Quite fun but tense too as our MD joined us.

Nex & T3

Brought Ellard to Nex for some shopping & night time to T3 for dinner. Long q at 4 fingers - a newly open Korea fast food joint! Not that nice at all yet super long q. Maybe it's new and ppl are curious! next we let Ellard has the animal car ride, $10 for 3 rides. And 3 of us take turns to sit with him :) A fulfilling day for us and Ellard. He was so tired after that.

Satay at Garden by the bay

Hoo brought us to have all the nice foods at Satay by the bay, We ordered satay, stingray, bbq chi wings, sugarcane drink etc.. All kind of foods similar to chomp chomp. Our boy now just like to eat the same foods/ junks as adults! He will grab satay / chix wings etc.. Really fun to have him with us.

Shopping 14 Jun 2014

I will make a point to bring Ellard out on weekends since he has been staying home on weekdays. Today I bring him to Takashimaya and follow by my favourite teppanyaki dinner at Wisma fodcourt. Surprisingly the high chair can fit a baby chair on it for Ellard. He was happily watching the chef cook right infront of him! He like the seaweed soup too but of cos I did not let him drink so much.
 
After our dinner, we went to look for Hoo at The Float. But is was quite late by then, so we only wait for him at the 1st floor hall area. Some decro there for us to take pictures. And our boy, as usual runs about at the spacious area too.

My 2nd excitement!

Hmmm, missed my menses for the 5th day today. This time have some positive feeling and decided to test it this morning. This kit was abit slow, I waited about 8 sec, it still show only negative, and when I about to throw it, I realised a light + blue sign appear very slowly.. And yes! It shown positive!!

Actually I thinking to test it on last Friday, but it was only 2 days delay. I afraid the result will be same as I test it in March after 2 days delayed.. Disappointment. So I drag it longer this time.

Mixed feeling now, happy and at the same time worried cos Ellard will be attending church school next year March and that was about time of my 2nd new born. I was thinking whetehr to find a full day childcare for Ellard or... I really don't know.. Maybe I should meet MP and ask MP to write me a letter to get into one of the childcare near my place.

Portfolio CD ready

Alvia delivers Ellard's portfo;io CD on Sunday 4 May 2014 9am. The 82 photos costed me S$500. Too bad is Ellard didn't focus well at the photo session. hence the best we can get is 82 shots. My firend got 120+ for her gal the other times. Well, of cos more pictures will be more worthwhile. We got a A8 frame with 1 of the pic we selected. 5 x 5R and another 8 mini sizes with 2 poses.

Dinner at Chinatown point

Finally get to eat 美人锅 at Chinatown Point despite the long queues. Ellard loves the rice noodles so much & keep eating it. The soup is nice but overall I feel is not worth the price as the portion of 3 persons are so little. 1 lady finger each etc..

After dinner, we went shop around and I bought 2 items from Uniqolo.. Spend money = heartpain yet happy!

Dinner & Movie on Labour day

We brought Ellard to Sengkang swimming complex for waterplay. At night we are meeting Daryl;'s friends & partner for dinner at The Cathay - Astons and proceed for spiderman movie after that. Such a great & fun gatherings that we hardly have. Hope for the next one soon.

Breakfast at City Sq mall

Nothing to do at home & I really don't want to waste my weekends at home. I want to bring Ellard out to anywhere or places which I can think off, as long as with Ellard! Surprisingly Daryl wanted to join us and he want me to wake him up at 9am! There we go, headed our way to City Sq Mall.. But hor, too early lor, a lot shops/ restaurants not open! Ended up we walk outside the mall to settled ourselves in one coffeeshop for carrot cake & fish ball noodles for the maid! And the weather is damn hot! But that doesn't matter, cos Daryl is making an effort to wake up & join us this day!
 
After breakfast, we walked around the mall & went to have some fun at the arcade. Ellard loves to sit at those car rides. But he struggles when Daryl placed him on his lap. So funny, he can't sit still for more than 5 mins!

扫墓 - 12 Apr 2014

We brought Ellard with us to Mandai Crematory to visit my FIL. By right this morning he should go for his 18 mths jab but he is having running nose so we need to postponed the jab! Now he saw our relatives, he no longer cry as before. He even let them carry or when we ask him to hug them, he will do so, My sil said he is getting much better after he went to toddler class. And yes, I think the class help him to become more sociable.
 
We proceed to Cafe 566 for lunch. We were sitted in a big round table in the restaurant all by ourselves. Now the restaurant put up more deco, it seems like we are eating in the zoo or jungle with animals surrounded us. Very cosy & nice place which we can slowly eat with  no one to chase you out feel.

Dim Sum at China Square

Once again, bro and family invited me for Sun morning dim sum at China Square. Foods quite ok and again bonding for Ellard & cousins continuously for 3 days. And he's now more open to them & even let cousin ZJ holds his hand to walk around. He even let my sil carry & play him which normally he don't allowed everybody even relatives to carry or touch him. My boy grown up lo.

Dinner at bro's place

Been at brother's place for dinner continuous on 4 Apr & 5 April 2014 Fri & Sat nights). 1st night we are having chicken pot prepared by my sil & 2nd nights are those home cooked dishes. So nice of them knowing I am lonely at home as daryl was out for BKK trip with friends. And also after my bad scarely incident on 2nd April too.

Well, pictures taken with the boys as usual. Nice to feel welcome & love from bro & family.

Swim & dinner

Brought Ellard for a swim & aslo settled our dinner at Chinatown newly open food street. A lot of nice foods there just like Chomp Chomp. But the price is high. One bbq chix wing costed S$1.80 each. Gosh.... The queues are long too almost each stall. Maybe should not go during peak hour. And 1 more thing, I can't find baby chair there so it's abit inconvenienced if bring kid there.

1st attempt of cup cake

Again, recipes from google search too. And i find it more easy than blossom making.

Basic Cupcake Recipe

Makes 12 standard-size cupcakes or use half the quantities to make 18-24 mini cupcakes 

Ingredients

  • 125g butter, softened
  • 125g caster sugar
  • 2 medium eggs
  • 125g self-raising flour
  • 2 tbsp milk

Method

  1. Preheat the oven to 190RC/gas mark 5. Beat together the butter and sugar in a bowl until light and fluffy. Add the eggs, flour and milk to the bowl and beat until the mixture is smooth.
  2. Divide the mixture between the paper cases and bake in the centre of the oven until the cakes have risen and are just firm to the touch in the centre. The standard-size cakes will take about 12 to 15 minutes and the mini cakes will take 10 to 12 minutes.
  3. Remove the cakes from the oven and transfer them to a wire rack to cool.



I've yet to try out butter cream for the cupcake yet but I will do it tomorrow using the following recipe:)

Icing butter cream
Ingredients 

  • 250g butter, softened
  • 1 tsp vanilla extract
  • 600ml icing sugar
  • 2 tbsp milk
Method

1. Butter & vanilla extract & beat until the mixture is smooth
2. Add in sugar 1/4 quarter at a time to beat
3. mix in milk, continue to beat well till fluffy
4. Add food colouring and deco cake

Next, I gonna try strawberry cupcake as Daryl likes strawberry stuffs. Recipe to follow:

Strawberry / White Chocolate Recipes
Makes 12 cupcakes

Ingredients

For the cupcakes
  • 240g butter, at room temperature
  • 240g sugar, caster or granulated
  • 4 medium-size free range eggs, at room temperature
  • 1/2 tsp vanilla extract
  • 240g self raising flour, sifted
  • 50g finely chopped fresh strawberries, plus 12 whole strawberries to garnish
  • 2 tbsp strawberry jam

For the white chocolate buttercream

  • 250g icing sugar, sifted
  • 80g unsalted butter, at room temperature
  • 25ml whole milk
  • 150g white chocolate, melted and slightly cooled

To decorate

Method

  1. Preheat oven to 180°C, fan 160°C, gas mark 4. Line a 12 hole muffin tin with paper cases and leave to one side.

  2. For the cupcakes cream the butter and sugar together. Add the eggs one at a time with a little flour to prevent mixture from curdling, then add the rest of flour and stir until smooth. Mix in the vanilla extract, chopped strawberries and 2 tablespoons of jam.

  3. Divide the mixture between the cases and bake for about 20 minutes until lightly golden.

  4. While the cupcakes are cooling make the buttercream by beating together the butter and icing sugar until fluffy and pale in colour. Add the milk and white chocolate and mix thoroughly.

  5. Using a sharp knife inserted at an angle, cut out a cone shaped piece in the middle of each cupcake. Fill the hollows with about a teaspoon of strawberry jam. Then, using either a piping bag or a knife, frost the cupcakes carefully with the buttercream so the strawberry jam is neither dislodged nor visible through the icing.

  6. Cut each strawberry into a fan shape by making a series of cuts from the top (just below the hull) downwards to the bottom. Then press down on the strawberry lightly so that the sections fan out.

  7. Make a glaze by mixing 6 tablespoons of warmed jam (in the microwave is quickest) with 2 tablespoons of water.

  8. Place one strawberry on top of each cupcake, brush with the glaze and sprinkle with edible glitter.

  9. Enjoy!
TOP TIPS
  • These cupcakes also work well with raspberries and raspberry jam.

Making of Cookie Pop

Well, I google search for the ingredients and there are so many out there in fact! I choose the most easiest for lazy me!

The most easy one:
  • 1 packet (185gm) Kraft Orea double stuff cookies
  • Lollipop stickes
  • 375gm dark candy melts (I prefer chocolate melts as it dried up faster)
  • 375gm white candy melts (any preference colours or add colours that u want)
  • sprinkles
  • candy eyes for cookie monster pop, as for the mouth I cut half of chocolate melt
Method:
  1. Gather all ingredients together.
  2. Place chocolate melts into separate bowls & heat in microwave oven for 1 mins & stir then heat further 20 secs intervals, until completely melted.
  3. Place the cookies on a plate & heat in the microwave for 10 secs to soften the cream filings. Gently twist the cookies apart. Push the lollipop sticks into the cream filling & place a teaspoon of chocolate onto the cream filings. Place the cookies back together & leave to set for a few mins.
  4. Dip each Oreo pop into melted chocolate & poke into Styrofoam.
  5. Top with sprinkles of your choice & leave to set for 10 mins.
  6. To display your oreo pops, you can cover styrofoam with decorative paper & poke your pops into the fom and serve.
    Cookie pops

More detailed cookie pop:
  • 1/2 package (24 cookies) Oreo cookies
  • 1/3 package cream cheese
  • melting chocolate
  • sprinkles
Methods:
  1. Place the cookies in a food processor till thoroughly crumbled.
  2. Pour the crumbs in a bowl and add the cream cheese. Using your hands thoroughly mix the cream cheese with the crumbs. Roll the dough into 1 inch ball. Refriderate balls for at least 10-15 mins.
  3. Melt chocolate by heating in microwave oven for 1 mins & stir then heat further 20 secs intervals, until completely melted.
  4. Take out the balls & stick the lollipop stick into them, then dip them in the chocolate one by one. Sprinkle with coloured sprinkles if desired. Leave them to dry.
